In Perfect Paige, Special Agent Alex Hooke Celiac Disease, which means he can’t eat gluten. The two older women who raised him, Russian immigrants who own a successful taxi company, were never inclined to try to make yummy gluten-free treats for him. Paige’s daughter has Celiac Disease too, and when Alex tastes one of the treats Paige makes for her…
Alex hesitated a moment before reaching for the cookie. He took a bite. He felt his eyes widen and extra saliva instantly fill his mouth. It was chocolate chip. And it tasted like a real cookie. Crisp, gooey, and with a soft, moist center. It took all his willpower not to flash his badge and demand that the seven-year-old hand over her entire bag.
“Mr. Hooke has Celiac Disease, too!” Riley called over to his mom. “And look at his face! It’s funny. Like he’s been living in a cookie-desert.”
Alex is half-way in love by the time he finishes the cookie! But the recipe I have for you today isn’t for cookies— it’s for all natural gummy bears. Why? Because my son has Celiac Disease and he’s never been sicker than the time he ate gluten-containing gummy bears at school. And gummy bears aren’t even supposed to contain gluten! Here’s my all natural recipe—with no red 40, yellow six or 5. ‘Perfect Paige’ wouldn’t have it any other way than all-natural!
3 teaspoons honey
4 large fresh strawberries
⅓ cup water
3 tablespoons unflavored gelatin
Gummy bear silicon mold (I bought mine at Amazon)
Combine all ingredients except gelatin in a saucepan.
Stir over low heat and gradually whisk gelatin into the mixture.
Mix until the gelatin dissolves into the water and the mixture looks smooth and glassy.
Place gummy bear mold on a flat dish or cookie sheet and use the dropper to transfer the mixture onto the gummy bear mold.
Freeze for 30 minutes.
Pop the gummy bears out of the mold
Place in a plastic container with an airtight lid and store in fridge for up to two weeks.
